What a great way to start and finish a weekend. Friday, stopped by the Berry Farm Stand in Fondren and purchased fresh tomatoes, onions, lemons, garlic and F.R.O.G. Jam. (figs, raspberries, orange peel and ginger). Then made a stop at Paul Anthony’s Butcher Shop and picked up Salmon and Tilapia. Used the FROG Jam like a chutney (cooked it down with Balsamic Vinegar and garlic – then added EVOO) – to serve as a salad dressing for fresh tomato/fresh mozzarella/fresh basil. Panko/Parm’d the fish into “fish sticks” not too different from Giada’s (De Laurentiis) version. Perfect dinner for a HOT summer night.
Then Sunday brings my friend and local architect, Mike McBride, fresh from an amazing weekend at The Alluvian Inn, Greenwood, MS bearing a fresh loaf of Fig and Pecan Sourdough from the Saturday morning farmer’s market. So tonight,toasted fresh tomato, mozz, basil on Fig and Pecan Sourdough. Here’s to a great start of the week to ya! E.
